I got the opportunity to plan a vegan meal for one of the labs. We dined on Coconut Curry Thai Tofu and rice. We had broccoli slaw as a side, raspberry soy ice milk for dessert and Russian tea to drink. The citrus in the tea was added to help absorb iron from the broccoli. The broccoli slaw and soy ice milk served as cool contrasts to the hot main course and beverage.
The centerpiece is pictured at the top of each page. The teapot was in the center of the table with a bowl of goldfish on each side. Small pebbles surrounded these items.

In between checking on the workers in my group, shredding broccoli, setting the table, and making tea, I stirred the rice.
